Shami kababs use boiled mincemeat as their base. The mincemeat is boiled with spices and chana dal, then ground and made into flat patties. They are then shallow fried. The kababs have a crisp outer skin and a soft core filled with onion and chillies. They are often served with biryani, pulao or with parathas.
