Shahi Gulathhi is a Rampuri dish created for the royal tables and can be defined as a very rich version of the traditional sweet Indian rice pudding, the kheer. It is differentiated by the use of cream, khoya and ghee. The term gulathhi has the suffix ‘gul’ meaning flower. The scrapings after the cooking are caramelized and fashioned into little florets or gul for the garnishing. They give a caramel and smoky redolence and hence the dish is called gulathhi. Gulathhi is slow-cooked and set in clay pots.
