The khansamas of Rampur were traditionally the repositories of culinary skills. They worked in the royal and elite kitchens through generations, each specializing in specific genre––kababs, curries, pulaos and sweetmeats. British and Continental dishes were also included on the Rampur dastarkhwan in aristocratic households. Chefs were sent by the Nawabs to Paris to learn cooking and baking. Several khansamas lost employment after the abolition of zamindari and the privy purses.
From the first decade of the twenty-first century, there was a revival of interest in Rampur cuisine sponsored by members of the royal family. The local khansamas responded to this interest by trying to revive the varieties of the cuisine from food descriptions and food stories. New styles of halwas––like neem halwa, turmeric halwa, lehsuni kheer, and khubani halwa–– were the innovation of local khansamas. These dishes caught the imagination of the media and were featured in shows like the Chef Kunal Kapoor show, The Halwas of Rampur and Raja, Rasoi Aur Anya Kahaniya. The khansamas also displayed their skills at food festivals hosted by five-star establishments and took up catering for special occasions all over the country.
