Book a Khansama

The khansamas of Rampur were traditionally the repositories of culinary skills. They worked in the royal and elite kitchens through generations, each specializing in specific genre––kababs, curries, pulaos and sweetmeats. British and Continental dishes were also included on the Rampur dastarkhwan in aristocratic households. Chefs were sent by the Nawabs to Paris to learn cooking and baking. Several khansamas lost employment after the abolition of zamindari and the privy purses.

From the first decade of the twenty-first century, there was a revival of interest in Rampur cuisine sponsored by members of the royal family. The local khansamas responded to this interest by trying to revive the varieties of the cuisine from food descriptions and food stories. New styles of halwas––like neem halwa, turmeric halwa, lehsuni kheer, and khubani halwa–– were the innovation of local khansamas. These dishes caught the imagination of the media and were featured in shows like the Chef Kunal Kapoor show, The Halwas of Rampur and Raja, Rasoi Aur Anya Kahaniya. The khansamas also displayed their skills at food festivals hosted by five-star establishments and took up catering for special occasions all over the country.

  • Mehfuz Ali Khansama

    He is an enterprising young person who belongs to the fourth generation of Rampur khansamas. His father, Muhammad Ali Nanhe, was a renowned kababi and had set up a shop in the Rampur Qila area.

  • Haji Bhura Khansama

    He comes from several generations of khansamas who cooked for the Nawabs at grand dinners. He started working with his father when he was merely ten years old.

  • Nayyar Saleem

    She started her home catering business during the Covid lockdown of 2020. Today her Ultimate Rampur Delicacies is a highly successful home delivery catering company operating in Rampur.

  • Nayeem Khan

    He heads the popular Kareem Restaurant with his innovative culinary skills and business acumen. Kareem Restaurant was a pioneer in the field of outdoor eating.

  • Aslam Khan Khansama

    Aslam Khansama has generations of cooking wisdom and skills in his veins. He learned cooking from a very early age from his father and grandfather.

  • Chef Suroor

    He is a first-generation khansama taking his passion for Rampur cuisine to curate at food festivals all over India. He also participated at Jashn e Rekhta.

    Hakim ji Halwa Sohan

    This is a halwa sohan outlet established by Abdul Hakim Khan in the 1930s. It has an array of sweetmeats from Rampur cuisine.
